Grande Provence showcases sensory splendour of flagship white blends

Diverse white
wines from classic Bordeaux-style elegance to unusual blends from pockets of
gnarled vines in the Swartland and Franschhoek take centre stage at Grande
Provence Heritage Wine Estate on Friday, 23 September for their monthly Wine
& Dine Collaboration.
Teaming up
with David & Nadia, Constantia Uitsig and Oak Valley Wines, Grande Provence
cellarmaster Matthew van Heerden and Executive Chef Darren Badenhorst have put
together a superb pairing menu to showcase the finesse of each signature blend.
The evening at
The Restaurant at Grande Provence starts off with David & Nadia Aristargos
2015. This melange of interesting white varieties from old Swartland vines will
work its magic with local tuna tartar, spiced guacamole,
burnt tomato crème, caviar, confit potato croquette and toasted black sesame
truffle.
For the Oak
Valley Mountain Reserve 2011, a true Bordeaux-style classic, Chef Darren has
conjured up an asparagus
garden of smoked pea arancini, truffled gem cannelloni, pea sprout salad and
pickled wild mushrooms.
The flagship,
The Grande Provence White 2014, an aromatic blend of Chenin Blanc and Viognier
from some of the oldest Franschhoek vines, will be served with salted and baked local hake, celeriac
and summer apple remoulade, baby fennel and rainbow beets.
The Constantia Uitsig
Natura Vista 2014, utter Bordeaux-style elegance, is the perfect end to the
meal with Chef Darren’s signature “apple tarte tatin meets waldorf”. Think crystallised
walnuts, baked all spice apple, frozen mousse, citrus and celery, with a salted
caramel glaze.
